American as Apple Pie - by Linda Keil

INGREDIENTS FOR PIE CRUST:

2 cups unbleached flour
1 1/2 sticks cold butter, cut up
Zest from 1 lemon
1 tsp. salt
2 tbsp. sugar
Ice water (about ¼ cup)
Preheat oven to 425 degrees

In a food processor, add flour, sugar, lemon zest, and cut up butter. Process until small pea-sized pieces of butter. Don’t over process.

Dump into a large bowl and add 5 tablespoon of ice water, tossing the mixture as you go. Press bits together, if necessary add more water—not too much. Gather into a flattened round ball. Wrap and refrigerate for 30 mins.


INGREDIENTS FOR APPLE FILLING:

About 6 cups of apples (mixture of Granny Smith, Golden delicious, and Empire) sliced into eighths.
l/4 cup white sugar and 1l4 cup light brown (more if apples are tart)
1 tea. Cinnamon
Juice of 1 lemon
3 rounded tbsp. Flour
2-3 tbsp milk

Toss apples and other ingredients together until coated and arrange in rolled out dough in pie pan. Roll out the top portion of dough and make decorative slits add leaf cut outs too. Crimp edges or flute them and brush top with milk and sprinkle with a little sugar if desired.

Bake at 425 for 20 mins and reduce heat to 375 for 40 mins or until golden brown. Yum.
